A seasoned leader of acclaimed kitchens across the globe, Chef Andres Farias brings a worldly perspective and a masterfully honed culinary craft to his role as Executive Chef of Cavalier, the signature American brasserie at the InterContinental San Antonio Riverwalk. Originally from Caracas, Venezuela, Farias has shaped culinary programs for some of the world's most distinguished hospitality brands, including Trump International Hotel & Tower Chicago, Trump National Doral Miami, Starwood Hotels - Marriott International, and InterContinental Hotels Group.
At Cavalier, Farias champions a culture of culinary integrity rooted in creativity, discipline, and heartfelt hospitality. He leads his team with a focus on empowerment, transparency, and mutual respect - principles he believes are essential to a thriving kitchen. His approach emphasizes responsible sourcing, the celebration of local and seasonal ingredients, and the cultivation of an environment where every team member is encouraged to contribute and grow. His leadership philosophy is simple but profound: when people feel valued, the food tells that story.

James Brown
A hospitality veteran with a knack for thoughtful, gracious service, James Brown leads our team at Cavalier with warmth and empathy. Most recently, he was a similarly effective leader at the Omni here in San Antonio, and previously, he was a food and beverage manager at The St. Anthony Hotel and the Hyatt Regency in Lexington, KY. His experience leading hospitality teams to exceptional service for more than 2 decades is clear in every moment that he creates, and our guests know that they can rely on him to craft unforgettable and unique experiences every time that they visit.
